you will need:

(Makes 1.6kg)

• 660g rolled oats

• 125g skin on whole


• 50g flax seeds

• 50g sesame seeds

• 50ml maple syrup

• 100ml sunflower oil

• 250ml runny honey

• 50g dark brown


• 50ml water

• 1 tsp vanilla extract

• ½ tsp ground


• 5g whole nutmeg


• ½ tsp coarse salt

• 125g dried


• 100g sultanas

• 50g dried cherries

The Twist

You can customise the dried fruits with any

favourites e.g. bananas, figs, dates, sour

cherries, and also swap the seeds and nuts

to create your own granola.

Granola will keep for several weeks in an

airtight container, and can be frozen.


1. Heat the oven 150˚C / 300˚F. Line two

baking trays with baking paper.

2. Put the oats, almonds, flax and sesame

seeds in large bowl and set aside.

3. In saucepan melt the maple syrup,

sunflower oil, honey, brown sugar and

water and heat gently whisking until it all

melts and is combined. Remove the syrup

from heat.

4. Stir in the vanilla, cinnamon, and grated

nutmeg to the syrup. Mix in the dry

ingredients. Spread the mixture into the

baking trays and bake in oven for about 60


5. Remove from the oven after 60 minutes,

turn the mixture, return to the oven and

lower the temperature to 140˚C / 275˚F.

Bake for further 30-40 minutes. Remove

from the oven and allow to cool completely.

6. Once cool stir in the apricots, sultanas

and cherries.
